Xanthan gum is a polysaccharide, which is a carbohydrate molecule. It is the product of bacterial fermentation. When bacteria ferments in a liquid made of glucose, sucrose or lactose, it is then dried and turned into a fine powder, which can then be added to foods to act as a binding agent.
Why do we use xanthan gum in your products?
As we do not use any gluten or grain in our recipes, we need something to help bind our dough together. Gluten is a sticky protein which is gloriously stretchy (think of the pizza dough chefs who toss and stretch their pizzas in the air before it's cooked). Xanthan gum is an ingredient that we use as an alternative binder in a few of our recipes, which helps our tortilla and chip ingredients combine together well.
We use a minimal amount of xanthan in our recipes and continue to research and develop new innovative ways to formulate our products without the need for gums at all.
We strive to make products that are accessible to as many people as possible. For those with gum sensitivities, Real Coconut Superfood Tortillas contain ground chia seeds as a replacement for xanthan.
Rice starch is a common carrier for seasonings, however as we are a grain free brand, this cannot be used as a carrier for the seasoning and maltodextrin is the only appropriate alternative at this moment. We are continuing to research other options for our seasoning.
The maltodextrin used in our chip seasonings is derived from organic tapioca starch.
Grain free ingredients such as coconut, plantain and cassava flour do not have inherent binding abilities so another ingredient (such as cassava starch) is needed to bind the products together. Cassava starch (also known as tapioca) is generally safe for most people on a gut friendly diet which is why our chips and tortillas use a small amount to give them their form.
Tapioca starch is an extracted starch from the whole cassava root. Cassava is a carbohydrate rich, root vegetable that is also gluten and grain free. This starch is mechanically extracted from the whole root and can then be used as a thickening and binding agent in gluten free products.
We believe coconut oil to be one of the healthiest oils to cook with, due to its stable molecular structure which means it is more resistant to oxidation at high temperatures and is therefore the best option for frying our tortilla chips!
Coconut flour is grain and gluten free and contains very high fiber content, making it easy for most people to digest.
Chia seeds are a tiny, nutrient dense seeds that originate from Central America and is one of the most gut friendly seed varieties that can typically be tolerated by people with sensitive digestion. We offer a few superfood tortillas made with ground chia seeds for those who are sensitive to gums.
Yes. Our tortillas are perishable and should be placed in the refrigerator or freezer immediately upon receipt. Our tortillas are good for about 6 months if placed in the freezer, and around 2-3 weeks in the refrigerator. If you receive an order with melted cold packs or dry ice, don't panic! Our tortillas can stay fresh at room temperature for a few days, just place them in the refrigerator or freezer immediately after receiving your package.
Since our tortillas do not contain and gluten, we recommend lightly warming them before enjoying as this will help them be a bit more flexible. Try heating in a microwave for 10-12 seconds, or lightly brushing with oil and warming on a skillet for 10-15 seconds on each side. You can also brush our large wraps with a bit of water before microwaving for 10-12 seconds. Please keep in mind that since our tortillas are made from coconut flour, they can dry out quickly if overheated.
